German: Bavarian Sauerkraut

(serves 4)
Ingredients:
- 2 cans sauerkraut (about 28oz)
- 4 slices bacon
- 1 small onion, finely chopped
- 1 teaspoon sugar
- 1 medium apple, peeled and finely chopped
- 1 cup apple cider
- 1 teaspoon caraway seeds
- salt and pepper to taste
Procedure:
- Drain sauerkraut, set aside
- Fry bacon in pan, finely chop the bacon when done, set aside
- Cook onions in remaining bacon fat until soft (about 3 minutes)
- Sprinkle sugar on top, stir, and let caramelize slightly (about 1-2 minutes)
- Add sauerkraut, apples, caraway seeds, and vinegar; stir well, cover, simmer for about 30 minutes
- Season with salt and pepper to taste
